SPICY CHICKEN ENCHILADA CASSEROLE

1 lb ground chicken
1 pkg taco seasoning
Sauce:
1 can 98% fat free cream of chicken
1 cup chicken broth
1/2 cup salsa
1 tsp. cumin
1 tsp. garlic powder
1 tsp. chili powder
8 mission extra thin corn tortillas
16 jalapenos (either canned or jarred)
1/2 cup low fat mozzarella cheese
Cook ground chicken and 1 package of taco seasoning.
In a medium sauce pan combine all sauce ingredients. Cook together until well blended and heated.
Put a small amount of sauce in the bottom of a 9x9" pan.
Add a layer of 2 torn up tortillas.
Add ground chicken and 8 jalapenos.
Cover in sauce.
Continue adding layers until 8 tortillas have been used (4 layers),
Only add jalapenos to every other layer.
Top with 1/2 cup of low fat mozorella and cook at 350 degrees for 30 minutes.
